This week one meal really stood out from the others for local and zero mile flavor.
Rotisserie chicken; couscous with sundried tomatoes, basil, and ricotta cheese; mixed green salad with chevre, radishes, and green onions; homemade ciabatta bread.

Mmmmm…delicious! For Thanksgiving this year we managed to pull an almost totally local, nearly zero mile meal complete from Touch the Earth Farm—if it weren’t for the lousy potato harvest this year, we would’ve done it. Farm to Table

Green zebra and summer squash salsa with balsamic vinaigrette, served as a side to a rotisserie chicken.

Recipe:

Dice yellow squash, green zucchini, and green zebra tomatoes
Toss with balsamic vinaigrette

Balsamic Vinaigrette:

equal parts of olive oil and balsamic vinegar
pinch cayenne pepper
pinch sea salt
dollop dijon mustard
minced garlic clove
basil
